I used to use Protracker (and soundtracker) back in the Amiga/Atari ST days and there are still excellent versions about today . . . but they are simple.

eJay is pretty good for benginners, but if it's your thing then you'll soon be wanting to progress onto something with more function. Depending on how you work you'll be considering the likes of Cubase, Reason, Ableton Live, Cakewalk Sonar etc.
