Any ideas where you want to go? You might struggle to get all inclusive for £600 as the prices are generally higher due to the airlines pulling back on numbers of flights due to the credit crunch and airlines like XL going out of business.

Im assuming its for a week??

Might be an idea to look for seperate flights via a low cost airline, Bristol will prob have a better selection than Cardiff, and then seperate hotel / apartments from sites like Hotelopia which often has discount codes on here and decent quidco cashback.
try egypt. the three corners saint george in sharm with thomascook is very reasonable. we flew there last june for just over a grand AI and it should be cheaper in september. best hotel i've ever stayedin
stay away from europe if you wanting cheap,
also i agree with the above book flight and hotel seperate, book flight first
Don't know if its any help, but Thomson currently have an offer on where you can upgrade to HB for a penny, or if the hotel was already HB upgrade to FB for a penny. Not sure of dates and prices, but might be worth a look. Thomson are pretty good for holidays including young kids.
Portland Direct
Just make sure whoever you book with are ABTA and ATOL protected
