you should ask Barky hes the authority honestly!
i can tell you we booked on the disney site but i used the irish site as found it worked out cheaper in euros for some reason!
i just booked accom and did the chunnel seperately. Im unsure if you can book hb...never noticed it when i booked.
You can get some cheap hotels that are not in DLP itself, but they don't include the tickets, so probably what you save on the room you will end up forking out on the tickets to the parks. As both of your kids are now 7 or over, it might be best to try and wait for a '12 and under go free' offer in which case you only pay for the adults. They make the rounds fairly frequently.

I booked a 4 day trip 2 months ago - going out July 30th- Aug 2nd (peak time during kids summer hols), staying at the Cheyenne for 2 adults and 2 kids under 7 and it cost me £470 B&B, including tickets to the parks for all 4 days. I was able to use the 7 and under go free offer as well as a 'flash 50% off sale' - which also does the rounds fairly frequently - which meant I was literally paying for 1 adult only
Another tip.. try not to book the Eurostar through the DLP website, they charge much more. Try and book direct with the Eurostar website (providing you can match the train times to your dates.) My tickets for 2 adults and 2 kids cost just under £300 direct to DLP!

Another tip, try and buy yourself some fast passes to cut the queues at the parks. Available on Ebay!!! I have bought a pack of 16 for abt £15
i dont know if the offer is always on but if you stay at a disney hotel you get access to the park early morning before generall access...and we used this time to go on the rides which always had queues!
can recommend the new york hotel it was lovely-we had a room with two doubles but i met someone refused the room as she had teens and they gave her a family room FOC
i suggest you take one of the coach tours much more cheaper and also no waiting as you get a top pass for the park no waiting etc. we went with david urquhart it was pure brilliant we will be going again .also included was a day into paris plus a night to paris including a trip on the canal okay it was b/b.only but when you have kids they are not interested in dinners etc but there is plenty of places for all kind of foods that would suit most folks. a very good holiday we all had.
