protect pineboard for worktop project

Would a Danish or linseed oil not work? That's what I have used in my oak sideboard.

worktop oil on its own will be enough

You need polyurethane varnish for food use. Sand the wood using something like 120grit and then 320grit. Then run over with some 0000 grade wire wool. The put on first coat of varnish then lightly wire wool this when dry. Then do a further two coats.

I use Rustins clear Matt polyurethane varnish. It's not totally Matt but like a Matt laptop screen rather than glossy.

Epoxy Resin is the best way to get a high gloss finish but it's expensive.
