Which specs would perform better on a gaming laptop?

Same i5 CPU but: 960m 2GB DDR5 and 8GB RAM (DDR4 2133 MHz) OR 960m 4GB DDR5 and 8 GB RAM (DDR3L 1600 MHz) The trade off is less VRAM in a grapic card but faster new DDR4. Is it better?

Same i5 CPU but:

The 4GB DDR5 but by VERY little (talking 1 or 2 frames) just pick which design you prefer as the specs at this level wont matter.
Are you sure the CPU are the same as its usually above 5th gen for DDR4 and under that for DDR3

The more memory a card has generally the better it will perform, so the 4GB card

Yes, both got Intel Core i5-6300HQ the difference is as stated above.

There's no such thing as DDR5 (yet), it'll be GDDR5 which is a DDR3-based technology with higher bandwidth and latency.

The two would perform very similarly but I suspect the lower memory capacity will be more likely to cause noticeable performance drops a few years down the line.
