Good price, only slight criticism I would have is vac-packed pork sometimes takes a bit more effort to get the crackling right - make sure you dry it off thoroughly with kitchen paper, and give it a rub with some salt so it doesn't steam and end up soggy.

Having just come back from a Morrisons shopping trip all I can comment on is that unless you want to cook it today you have no chance. Dates up on everything! Useless if you want to do a weeks shop!

I think you'll find the general opinion on HUKD is that Morrison's meat is better than the other supermarkets. Same goes for their fish too.

It's a good idea to dry off the skin but even better is to unpack the joint and leave it in the fridge out of the plastic wrapper: Let the air dry the skin. Add some extra score marks with a sharp pairing knife and rub a bit of salt in just before it goes into a hot oven. (Preheat the oven to be 20 or so degrees hotter than the cooking temperature, that way when you put in a big slab of cold meat and a cold roasting tin the temperature won't plummet for the first 10 minutes). Don't rub oil or any fat into the skin and don't baste the joint.

Really simple apple sauce can be made by peeling and coring some apples (eating apples are fine and won't need any extra sugar), chop them up roughly and put them in a microwave for a couple of minutes. Stir and cook for a minute or so more. Stir/mash with a fork into a thick sauce consistency.

Not a problem I have particularly noticed with Morrisons, although it IS what stopped me using both Sainsbury and Tesco for home delivery - end up with 100 quid's worth of next day's date food - handy! :-(

Some people might wipe a thin layer of oil on the tin to stop the joint sticking but if it's sitting in the oven roasting a couple of bits off the bottom of the joint will stick whatever you do. And those bits can be scrapped off when you make the gravy in the tin anyway so it's all tasty stuff that doesn't go to waste.

So no, you don't need to put anything else in the tin. If you want to add some flavours and you have some rosemary in your garden then pick a handful (woody stalks and all), shake any bugs or spiders off it, scrunch it up and sit the joint on it. If you like garlic you can also put some cloves of garlic in the pile with the rosemary.

At least this is one meat that isn't halal.Big heat from me. :)
