Slight confused there I fear - JL don't claim it's a TOSLINK - as that is an OPTICAL link via a fibre-optic connection. The cable you link to is the ALTERNATIVE S/PDIF digital audio connection - ie a coax WIRE with two phonos (ie coax to help minimise any interference pickup). Still a damn fine price for such a cable, let alone delivered within 5 days.

The only JL Toslink I can see is still £10

Just as a matter of interest would someone kindly explain the difference in performance (if any) in terms of sound quality/output between a Optical lead Vs. Coax lead when used with an AV receiver?

Well, there shouldn’t really be any, but, if its optical there will be a transfer from electric to optical at the output stage, then back to electric again when it gets to whatever its plugged into. So these two extra conversion stages introduce the (very very slight) chance of errors and potential problems into the system compared to a coax lead. But, there is no chance of electrical interference through the cable using fibre optics from outside sources compared to the (still very minimal) chance of interference using an electric coax cable.

So as a very general and only really from pure paranoia, If it’s a short distance with minimal chance of interference from other cables/components use coax, if you have to send a signal further (10m plus) or there is a higher chance of interference use a Toslink. Or, don’t worry about it and get whatever is cheapest with decent build quality.
