Normally it costs ~ 15000 or more points to get a free overnight stay in a hotel. However, they also have "PointsBreaks" where you can stay for a night for 5000 points. These are only available for a handful of hotels. However, they changed to a new set at the start of March, including these hotels.

I have booked one for a night away during the Easter School holidays. In a Holiday Inn, breakfast will be extra. However, with a Holiday Inn Express, you should get breakfast as well. Quite a few Holiday Inns can sleep 4 in one room, with a double bed, a single sofa bed, and another roll out mattress.
