Loves these knives. We bought them in the safety block and will definitely buy them again when the time comes. But had them 18months and they're still as sharp despite everyday use. Heat added :)

Buy a sharpening stone and you shouldn't have to buy again !!

buy global buy once,they can be expensive though, I love joseph joseph stuff but knives are a personal choice,having said that I voted hot on this deal as it's a good price for the elevate.
if buying sharpening stuff,buy a steel,a stone is more for damaged blades and can make it worse if you don't know how to use.
again heat for this deal.

Other way, steel puts an angle on damaged knives, stones creates a brilliant edge.

I agree - A stone is for removing some of the material and effectively grind the metal down to a new V-shape. A steel is used to remove burrs that occur either after continued use or after a lop-sided stone sharpen.

I'm still learning the technique so I use a steel after my sharpening attempts to tidy up :) But once you are adept at sharpening, you shouldn't need to.

Be aware that different knives have a different recommended sharpening angle.
