While the game is essentially the same on both PS3 & XBOX, the PS3 version suffers poorer framerates, sometimes dropping to 20fps during complex scenes.
The 360 version is almost always at 30fps, rarely dropping a few fps below.
The 360 version has 2 discs which can be annoying, but I guess the PS3 version has an initial install so they kind of cancel each other out.

I can tell you this - there was only a slight dip during some minor cutscenes. For actual gameplay and big cutscenes there was zero lag. This seems to be based upon misunderstanding - I'm fussy over how a game runs, and I had zero complains about ME3 besides some little framerate drops in little cutscenes.

GTX 680 @ 1920x1200
Min: 129fps / Max: 314fps / Avg: 187fps
Can probably reach 400-500fps at typical XBox settings :p

The PS3 version has no initial install as far as I can remember.
