They don't put much Vanilla in this do they! Reading the ingredients, it reads more like a Vanilla Flavoured Alcoholic Beverage. No doubt tastes great though!

I know! :) But it does taste great. And it works out cheaper than buying the 118ml bottle especially if you bake as much as I do.

Ethylvanillin is much nicer. And it's heat resistant, unlike natural vanilla! (That smell when you're cooking, that's flavour escaping.) Before anyone points out that Ethylvanillin is just a chemical, so is water.

Vanilla extract is an infusion of alcohol and vanilla, if you check other brands they are all roughly the same, some may add sugar.
To make your own add 8 vanilla pods to 350ml vodka, store in a cool dark cupboard, shake occasionly in 8 weeks you'll have your own extract.
This is a good price for the Nielsen Massey extract, personally I prefer the vanilla bean paste version

Products like this: https://www.cakecraftshop.co.uk/shop/products/id/c6513.htm and this: https://www.cakecraftshop.co.uk/shop/products/id/bea40.htm (option "Madagascan Vanilla Extract" flavour), in my opinion have too strong a flavour to be just regular vanillin, so I would suggest that they use ethylvanillin as a major ingredient.
Or get some of the stuff that they vap, I have no links for that!

By the way, you have probably already tried it. If you have ever eaten a strong, not just noticeable, but really strong and pleasant vanilla flavoured product, be it cooked, cold or frozen, it's more than likely due to ethylvanillin. ;)

Fantastic product, it's always worth spending the extra on this and I never ever buy the vanilla 'essence'.

I use vanilla extract in my bakes and vanilla paste in my vanilla buttercream.

I have a smaller jar of the extract and when it's running low I just decant some from the big container so it's more manageable whilst baking.

One day I will get around to making my own, but for now this is the best I've come across and is excellent value when buying in bulk compared to smaller jars of it.

I truly do not enjoy the taste of synthetic vanilla at all. For me it has to be vanilla pods, good quality extract like this or good quality vanilla paste like the Neilsen Massey one.

I've never had a bad product from Neilsen Massey and I've tried most of their extract range X)

Poor old you. The flavour that comes from vanilla is mainly vanillin. The body and the taste buds cannot tell the difference between the natural and man made , because they are the same thing. Although in this case I guess you are supposed to taste the difference as science has purposefully created something that tastes more like vanilla than vanilla. Poor scientists, they just can't please some people.

Correct. Natural vanilla extract is mostly vanillin. However it also contains other aromachemicals which is what gives natural vanilla it's depth and breadth of flavour and aroma. It is nothing to do with your desire to have a debate about how no-one except you understands that a natural-sourced and a laboratory created vanillin are identical.
The fact remains that natural vanilla extract is a superior product because it contains many other compounds.

Nielsen Massey produce the vanilla extract that is used in Haagen Dazs vanilla ice-cream - a company that knows not to rely on vanillin alone for its ice cream.
