Would Egypt be too hot at this time of year though? Would just be for 2 adults so I'm assuming it'd be ok?

The boats are air conditioned, with splash pools on top deck.
The trips tend to be early morning or late afternoon, to avoid the hottest period.
At this price you really must go..It's a steal..LOL

I'm originally from Egypt and I can tell you that this part of Egypt (the south) will be BOILING during the summer, I would say 40-45 C.
But don't worry, this part of Egypt is dry so you won't feel it as hot as you would feel 40-45 in the UK. I would go if I can take time off work!
My only advice is, once you arrive, go to one of the shops and buy a 'jalabiya' - this is a traditional dresss that people in the south use. It's like a long dress and will look nice in photos. Also, unless you have blue eyes and blonde hair, you will look like an Egyptian and street sellers won't know you're a tourist and rip you off ;-)

I was in the Sinai but it was easily topping 40-45 on a daily basis for two weeks in June. Took some quads into the dessert, like mad dogs and English men and it topped 50.
But must be said it was truly beautiful. Have to confess I went for the Scube but I've never dived anywhere else that even comes close to be so vibrant not even the Caribbean. I'm off to the GBR this summer so I'll be able to compare for myself but many people say Egypt is better simply because, to date, it's not been abused as much as the GBR.

A neighbour of mine fell ill with severe stomach pains and was given 2 injections. She went to the doctor when she got home and a couple of days later called the doctor out again.
She died the next day [last Saturday].

What did she die of though?

As you said it's optional, you don't have to pay for it unless you want to.
At this price, you will struggle to get a return direct flight to Luxor only so even if you're getting NOTHING while you're on the ship you're at least getting free accomodation ;-)
That's my opinion anyway.

If I wasn't in the middle of exams (Oh, and broke!) I'd snap this up.
