Cables implies something pretty substantial, in which case a soldering iron's no good - can't generate enough heat. In any case joining wires by soldering is a real pain, and unless the joint is well supported they'll often break at the ends of the solder anyway. Obviously I don't know exactly what you're trying to do, but I'd suggest looking at crimping rather than soldering. Quicker, easier and more reliable.
Can't say I've ever found 'helping hands' to be very helpful. Awkward to get into the right position then slip at the slightest pressure.

I have one of these which i got for soldering mod chips into games consoles, still going strong years later.
Low wattage is ideal for working with circuits or small wires.

it sounds like you need 'access' to a soldering iron. ring up some electronics repair places. I guess only independent ones would actually risk you using their kit. alternatively a hackerspace?
