It has to be said, there were some pretty bad episodes in Series 1 and 2 - it was clear that no one involved in the production knew where to take the show or if it had much life in it. The fact that it blends comedy and horror can also be misleading and in the early episodes it felt like no one was sure if the audience would respond.
However, it gained in a lot of confidence in series 3, building on the founding blocks of the earlier 2 seasons and having an actual mythology built around the characters. There were fewer derivative "monster of the week" episodes (some of which were truly awful), instead focusing on a much bigger story - very much like the early seasons of the X-Files.
Season 4 kept growing in scale and back-story and is where the show really hit its stride. Smart, funny, sometimes genuinely scary and with a lingering sense of doom that in my mind places it as one of the most entertaining series currently on TV.
I can't comment on Season 5 as I always wait for the dvd releases.
