The New Cask is finished in brand new barrels, while the Aged Cask is matured in used barrels. For the Aged Cask the aroma is delicate, slightly grassy with light citrus and subtle vanilla. The taste has notes of green and black pepper, with light vanilla and a clean finish. The New Cask has an aroma full of oak, cinnamon, caramel and vanilla, with a taste of soft pepper and nuttiness on the palate."
