Or would it be better to get something with a OS bundle ?
Good for what it is
Yes - you can get them for around £8. I bought this one which also provides an internal 20pin USB3 header so you can attached a USB3 card reader with front USB3 port:

get some sort of adapter.
Its a bare-bones machine, buy one for about £10
Would not call them essential either.

One company I refuse to deal with!
SD Card slot is essential for a computer? Since when?
Question 2 - yes, but please NOT Vista! :p
If you have a disc, just pop it in and follow the onscreen instructions.
In the event that it may require you to change the boot sequence to DVD/CD drive first, then this is easily done in the BIOS settings.

I know ones a server and the other is a standard PC, but what do you reckon the down or upside side of one over the other would be?
I need a server PC, to run VOIP server on for around 20 lines... but I may change that at some point and turn it to freenass

Even as a basic home pc it's overkill. The average user won't make use of the 8GB of ram.
Two:Cpu is decent for the price. Its a basic chip and overclockable, but dont expect i3 or i5 speeds.
Three:gaming WILL require a dedicated gfx card AND a new power supply, as the one supplied will have a low 12v amperage available.
Finally: the hard drive will likely be 5400rpm rather than 7200rpm which tbh to basic users is more than adequate. Cheap way to get to intel/ddr3 with the motherboard accepting socket 1155 intel chips upto i5's (certain types ofc).
