I've just come back from Florida, here are some tips.
If you are a Costco member in the UK then take your card, Costco USA sell pre paid cards that you top up with cash and then you can use that card at their fuel pumps that are a fair bit cheaper than anywhere else. Also food is a decent price in costco.
Visit wallmart, if you have kids pick up 2 'boost' mobile phones for £10 each, they come with credit and you can use them as a walkie talkie. Sounds weird but basically for a $1 a day charge you can talk to as many of these phones as you have the phone number, in any part of the USA just like you are using a walkie talkie. Why did I mentioned the kids? Well near the exit of most wallmarts you'll find an automated engraving machine. For £3 get your kids dog tags with the phone numbers of your new mobile phones. If they get lost they simply walk up to an official looking person (theme park staff, security or police etc) and show them the dog tag. You'll have little Jimmy back in minutes, unless you're missing little Tommy.
or just splash out the cash and buy little Jimmy his own phone.
Get to the parks early and purchase prefered parking, it saves you time when you get there and it saves you time when you exit. It costs a few quid more. Also consider VIP passes, I got one and walked on to most rides in both Universal parks as many times as I wanted all day. On busy rides, like the hulk, an 80 minute queue for the plebs was 8 minutes for us.
Buy a cooler, one of those polystyrene boxes things (in wallmart) for under £5 and put a load of drinks and ice in it. Leave it in your car while you are in the parks and on the trip home you'll all enjoy cold drinks as those boxes really work well. Works well for Coco beach, which is worth a visit. Try the prom/boardwalk for a frosty beer if you're not driving.
