Traditionally pot caught in the clear waters off the East Coast of Canada and the Gulf of St Lawrence. The Lobster is caught during the months from April to June when the Lobster is at its prime - full, meaty, sweet and succulent. It is then landed on the tranquil Prince Edward Island where it is cooked and frozen to maintain its premium quality.

Cooking Instructions
This product is fully cooked.
Remove claws, simply grab the body with one hand and twist the claws and
knuckles with the other hand. Use care when holding the knuckle since it has
sharp protrusions that can hurt if not handled carefully.
Lay the body flat on a chopping board. Insert a sharp knife into the back of
the head and cut along the natural line down to the tail to cut the body in
half.
You may notice a green substance on the meat which is called the tomalley.
There may also be a red substance known as roe found in some female lobster.
Both are edible and considered by many to be one of their favourite parts,
however they can be scraped off if desired.
Claw – remove the small pincer. Break the claw into its natural sections.
Crack the shell by tapping with a nut cracker or knife. Remove all shell to
extract the meat. Break and open the legs at the joint and use a fork or
skewer to draw out the slender pieces of meat contained inside.
Freezing Guidelines
Defrosting
Defrost throroughly for a minimum of 8 hours in a refrigerator.
IMPORTANT: If food has thawed, do not refreeze.
