This is a great deal.
I bought my iPT 32GB 3G right after the Keynote (when Apple announced it) for £229 from the Apple store.
Here's a bit of info on the iPod Touch I wrote up for another recent post.
I'll summarise it first though: this is a great deal, but only if you need 32GB of space.
But go with the 8GB and save £100 if you can cope happily with 8GB and don't mind not having voice control or a slightly faster processor.

Ok, teen and nerd here, let me clear a few things up for those considering this:
There is no 16GB 3rd Gen iPT. They discontinued the 16GB and replaced it with the 64GB.
The lineup is:
2G — 8/16/32GB
3G — 8GB / 32/64GB
The 3G's 32 and 64GB have faster internals, but I would say that it isn't really that noticeable, and advise against buying a 32GB for the speed if you could easily cope with 8GB of space.
On a related note, remember that you will receive slightly less free space on your iPod due to the firmware and apps which are installed on your Touch. So if you have 7.9GB of music, and you want ALL of it on your Touch at once, you won't be able to do this with an 8GB device.
This will work as a personal organiser, and although it's better if you have a Mac to use with this, it will work with a PC just fine.
However, I wouldn't recommend buying one to use as a personal organiser considering there are many other better dedicated devices for such things, like Blackberries or even Palms.
There is no camera in ANY version of ANY iPod except the iPod Nano 5th Gen.
Neither is there an inbuilt microphone in any iPod.
There is no voice control on the 8GB 2/3G, though, unless you're blind, I don't think this is really a very useful feature. I use it sparingly and have to make sure nobody is around so I don't look like a plonker talking to myself. When I do use it, sometimes it gives accurate results, other times... well, you may as well have gone through the menus.
There is voice control on the 32/64GB 3G, but as I say, no internal mic. Apple is kind enough to supply you with a pair of headphones which have a mic and three buttons halfway up the cord though. (I do quite like this).
The iPod Touch has Wifi and Bluetooth (and a chip which can handle Radio, but Apple haven't activated this chip yet (i.e. you can't listen to radio on the Touch — yet)), but no EDGE or 3G obviously.
This means you need to be connected to a Wifi network in order to access the internet on a Touch.
