Creme fraiche - http://www.wisegeek.com/what-is-creme-fraiche.htm

Fromage frais - http://en.wikipedia.org/wiki/Fromage_frais

I'd go with the fromage frais based on what I read

We use cream fraise as a substitute for Sour Cream so I would go with the fromage frais

That's what I based my decision on too.

Creme Fraiche would be more acidic than fromage frais.

Cream is used in casseroles to cut the acidity of tomato- based casseroles.

I wouldn't use fromage frais to do this?

I'd use single cream... I've tried the lower fat versions but they kinda taste rather icky.

Double cream? I've never used that.... I'd try sour cream or creme fraiche.

Good luck to wifey, let us know if it turns out okay xxx
