Christmas cake

I'm going to attempt to make my own christmas cake this year. Does anyone have any recipes etc and do any of you make your own christmas cakes?

Yes, I always make my Christmas Cakes.Over the years I have developed this mix of ingredients and have stuck to it now for about 10 years.

For 2 x 8/9" tins :

16oz plain flour - sieved
16oz butter/marg
16oz soft brown sugar with some caster sugar - sieved
9 eggs
1/2 tsp salt
2 tsp mixed spice
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
2tbsp treacle
grated rind and the juice of a lemon
4oz ground almonds
5lbs mixed dried fruit i.e. glacé cherries, raisins, mixed peel, sultanas, currants inc 4oz almonds
4 tsb brandy

Glad to see Treacle in there but I think you need to say Black Treacle because some people call Golden Syrup treacle for some reason, never understood why myself. It makes all the difference to the cake. I love treacle on toast too, lovely, although if you keep the tins for too long they do explode in the cupboard, what a mess!

Good point Yes, black treacle for all those who call syrup 'treacle'!!

Next: Housewifely Tip - don't let your treacle ferment, build up gas pressure and explode

3rd Housewifely Tip - if your treacle explodes, simple hot soapy water on a cloth is that that's needed to clean up. Chuck everything, you can, that gets treacled into the bin.

Pour on the brandy when cooked.
Wrap when tepid in thick foil; leave the greaseproof paper on.
They will keep like this for several months. You can repeat the brandy after a month. They will get better as time passes. That's why I make mine the last week in October/ half term.
If you have room in the freezer keep them in there as it makes them even better and they keep indefinitely like that.

These are the ones I made a couple of weeks ago. I thought you might want to see how to do the brown paper!!
They are in a kitchen cupboard just now.

Last week in October to last week in December = a couple of months, but you can get away with just a month, or even a day or two if push came to shove.

yummmm my mum puts sherry in hers, she used to make loads but it got very costly for her cos everyone would want one, shes not doing it this year anyone care to pity me with a huuuuge one?
