3 Course Dinner Idea Please...

Hi

Today is my boyfriend's birthday and I have been thinking what to do to make his day special. He's a medical school student and has been staying at the hospital free accomodation for the past few weeks. He told me he would be back home tonight so I am thinking to make it special.

I have already made a black forest cake and bought a shirt but I'm still feeling something's missing. Maybe cooking a 3 course dinner for us would be good. But I am not a good cook have no idea what to make :(

Can anyone give me some idea what to have for 3 course dinner, please? Ideal one would be just some easy ones that I can pop in to the supermarket and put in the oven.

He likes salads, cheese, lamb, beef, seafood, vegetables, mainly everything... My budget is £15

if you wanna make it special, follow this menu

Starter (About £1.50pp)
Homemade Tomato Soup with crusty bread

Main (about £4.0pp)
Chicken wrapped in motzerella (sp) and bacon, roast pots, with a nice white wine and mushroom sauce.

Sweet
BF Gateux

Drinks (About £6 per bottle)
Nice White Wine

I normally have HM ginger cake instead of the BFG, but lovely all the same!

What about:-
Pate on toast to start (nice and easy!)
chicken fillets, slit open and stuffed with cheese and leeks, then wrap 2 slices of bacon around to hold it together and stick in the oven, served with veggies (easy again)
Then you already have your black forest cake for dessert served with double cream (done!!)

I made this the other day. very easy and best lamb stew I have ever had.

starters tuna mayo and lil spring onions on a ciabatta bread....aka crostino al tono... lush!!

mains: a creamy pasta with mushrooms... just get the fresh egg pasta and the ready made sauces from shops... easy peasy

dessert: gateau

i'd agree with the pate on toast, but would have main course of salmon fillets with new/charlotte potatoes and french beans, with a pudding of strawberries and raspberies on those little pavlova/meringue nests and a little bit of cream.


or open two bottles of wine, 24 oysters, strawberries and cream and some chocolate.

depends on how happy you are to see him!!!

Starter:

Smoked salmon stuffed with cream cheese (seasoned with black pepper) and served with blinis (mini pancakes)

Main:

Steamed cod (or any white fish) wrap in a foil parcel, cover with ginger, soy sauce, garlic, little olive oil and bake in oven for about 30 mins on a med heat (check cooked before serving)

Service with spring onion mash and buttered carrots

Dessert

Gateaux


Medical students need brain food in my guess and carrots to see :-D

Do you want to cook it all or are M&S still doing their 2 courses + bottle of wine for a tenner? Then all you have to do is the pud!

I posted this a few weeks ago when someone was looking for a recipe, I personally would not worry about a starter, maybe just have a few breadsticks to munch before the dinner is ready with a dip selection, the effort you go to with the main course is going to be the most important part, If you end up spending the whole evening in the kitchen faffing about trying to make things you have never done before you won't be spending quality time with your boyfriend, you might end up all stressed, with something like the spag bol you can make it in advance and just cook the spaghetti at the last minute and warm the bolognaise sauce up. I would suggest you get a shop bought dessert. Hope you have a great evening :)

Here is my homemade spag bol recipe, you can half the quantities to make less for the two of you or make this recipe and freeze the remaining (can keep for upto a month)

Serves 4 (sometimes you get some left )
2-3 tablespoons oil
1 tablespoon butter
2 large onions
250g mushrooms
4/5 rashers back bacon
4 large carrots
1 teaspoon / 1 clove garlic (can use ready made hence teaspoon)
500g steak mince (lean is better, leaves less fat in the pan)
1 teaspoon marmite
1 tin chopped tomatoes
2 teaspoons of Italian/Mediterranean style herbs
approx 1/4 pint of boiled water (see below)
1 jar of bolognaise sauce (optional)

Chop all the veg & bacon up before you start cooking, make sure it's a fairly large frying pan

Put oil and butter into pan, butter gives extra flavour, heat on a medium low setting so when you put onions in it sizzles but they aren't going mental, (all the way through stir the ingredients round so it gets cooked evenly) cook them for a few mins until soft then add bacon, cook until rawness has gone, add mushrooms til they soften a little then mince, keep mashing the mince round until you can't see any pink in the meat. Add carrots and garlic, keep stirring and let them cook for few mins. Add teaspoon of marmite and mix it in the juices at the bottom until the spoon is clean (ish!) add 2 teaspoons of Italian/Mediterranean herbs. Add tin of tomatoes, water and jar of bolognaise sauce (I add this cos it gives extra flavour but it is not necessary, it takes a little longer for the sauce to thicken at the end, I use Seeds of Change Organic Bolognaise Sauce) You may want to add a little more water, I make sure there is just enough liquid to immerse all the ingredients, I then push everything under the water and leave it to simmer fairly rapidly and let the liquid reduce down, I stir about every 5/10 mins to stop it sticking to the bottom. I tend to leave mine for an hour (!!) or so with a lid carefully tilted on the top so steam can get out but my kitchen isn't covered in orange splats. Ideally the sauce should be fairly thick with no runny water in the bottom.

Optional.....use a hand blender to blitz the whole thing up, so there is no sign of mushrooms/carrots/bacon etc. etc. Be VERY careful though that you don't tilt the stick of the blender cos you will get sprayed with hot bolognaise sauce.

TIP OF THE DAY:-

Never have to peel spuds again :)

1. Cook with skins on
2. Once they fall off a knife when held up then thay are cooked.
3. Have a mixing bowl ready full of ice cold water
4. Put spuds in two or three at a time for 5 seconds
5. Pick out and skin just falls off

No waste either :thumbsup:

Thank you soooo much for all your super helpful advice!!! I have put all your ideas together and created a menu myself base on my ability and time limit. I am not sure if it's right to have them together, if not, I hope it's still special for being wrong...

Starter-
Pate on toast (and I also bought some small portion of brie and garlic cheese and a short french stick to go with)
Salad with orange dressing (fresh orange juice+vinegar+garlic)

Main course-
Roasted baby lamb rack with roasted potatos and a bit of steam veggies

Dessert-
Gateaux with thick cream

and I also bought 4 small bottles of wine, white and red 250ml each, at Asda they are 4 for a fiver.

Once again, a BIG THANK YOU to you all, I wouldn't be able to do this without you all!!!

Gotta say we eat the skins in my house, whether roasted, mashed, chipped etc. Give them a good wash beforehand although a bit of dirt didn't hurt anyone. Just to wash the pesticides off if not organic. :-D

It went so well at that night. He arrived home at 5ish pm so I asked him to go upstairs have a show to relax and would give him a shout when dinner is ready.

Apart from the starter, I put also a few candles around the dining area and had some nice soft music on.

He had no idea I planned a special dinner for him so when he came down stairs and saw what was on the table and everything his eyes were full of tears...

The lamb went really well, so tender and juicy, probably the best lamb I ever had. He said he was so impressed and touched by what I did... :p

I did tell him where the whole idea is from he was amused. :-D

It's so wonderful this place, I feel so lucky to have you all trying to help me.:thumbsup::-D

i made a simple 3 course dinner for my partner last night to save! i lurv you :P

had Pate,stilton and caramalised onion with warm crusty bread

then had a breaded cod fillet (flour and egged and breadcrumbed) on buttered leaks with new potatos

and a rasberry and blueberry with crushed shortbread vanilla sundae for desert :) probs cost me less than a tenner as cod was most expensive thing.
