One at a time in Itunes?
Why not just highlight them all, right click and convert to aac, just leave it running overnight if you have alot of songs.

exactly what I was going to say.
In theory you could select your whole libary and convert it all at once using itunes, it would take a while, but just leave it overnight.

you can import whole batches of songs into itunes at a time cant you? Ive certainly done it an album at a time-dont understand why you can only do one song at a time-cant you just click "import" and point it to a batch of files?

you can still manually convert MP3's though, highlight the song(s) in itunes, right click and select create aac version, only down side is you'll need to delete the mp3 version from the library.

I really don't understand why people struggle with itunes, importing and syncing, I think I must have my ipod set up differently, I just drag stuff (folders with loads of songs in) to the music folder on my ipod and away I go, I don't have to sync? or convert?

Why are you converting them? I-Tunes and I-pods will quite happily deal with MP3 files as well as AAC. But should you need to convert the files then
Open i-Tunes
Click "Edit"
Then click "Select All"
Right click on a highlighted file "Create AAC Version"
It should now create AAC copies of your whole library.
