butcher's meat knife, vegetable knife, bread knife if serrated (carving knife if not), not sure but would use it for opening oysters, salmon slicing knife, paring knife for vegetable sculpture, large cooks knife, if flexible - a boning knife, small cook's knife, paring knife

yeah I know lol

but I have started doing a lot of cooking myself so wanted a decent set.

I saw a documentary a while back about how ready meals etc are made and wish I hadn't ;-)

5.. used for thinly slicing meat and fish
6...for evenly shaping veg so its all same size
7..for herb or veg chopping ( eminceur )
8...de-boner
9..smaller version of 7 but used as rocking movement
10 veg knife

Maybe but I cant see how a knife could be any sharper than these. They are like scalpels :?

I have a sabatier bread knife which is excellent. Sold the GLOBAL bread knife for £45 so pleased with that :thumbsup:

My OH has a set- doesnt know what they do- all he does with em is manage to cut himself!! (I try to encourage him to use the knife a little higher up-you know he might just slit his throat:roll::roll:)

They aint global by the way- just a £40 ebay buy but they are wickedly sharp all the same.
As a point of interest- does anyone on her know of a decent knife sharpener? He has the steel one but is after a "professional"one for his birthday and I dont know anything about em. Any ideas would be appreciated. Thanks:thumbsup:

Ceramic steels are the way to go, or there is version that uses water & ceramic wheels which is recommended for use with Globals "minosharp ceramic water sharpener" (there are some on ebay if you cant find in the shops) is the one I know - expect to pay £20-£30 though, they're not cheap.....
