This is a splatter guard (well the only kind that i know) so as sancho says intriguing

Splatter guards allow 'air' to get out, cooking with a lid on changes the dynamic quite a lot.
Plus loads of frying pans don't have lids, none of mine do

This, frying with a lid retains the moisture within the pan which means the food is part steamed as well as fried, not good when you are aiming for crispy. A spatter guard allows the steam to escape whilst avoiding those nasty fat splashes.
