Chargeback advice please

This is the first time I've had to do a chargeback and it hasn't gone very smoothly so I am looking for some advice.

Last month I noticed a charge for a £63.64 purchase on my credit card that I never made.
It was payed to Zimusofts paypal account.
Apparently they sold me a DragonFireSDK.
It's developmental software for creating iPhone apps.
I never made this transaction.I don't even own an iPhone.
I certainly can't create software!

Anyway did a chargeback and got the money back.
But now Zimusoft are refuting the chargeback, saying I did order the DragonFireSDK and my bank now wants a letter from me knowing why I am disputing the transaction.

What do I say in the letter?
Just say 'look I never bought this, nor did I receive it'
Is that enough?

Also, how could this happen?
Zimusoft say

'This was an ecommerce transaction made through PayPal that was initiated by your cardholder.
Transaction details are included for this purchase.
AVS was a match'

What is AVS?
The number on the back of my card?

Should I have cancelled my card by now?

*edit*

On a side note maybe,
On the day this transaction took place, I did use my credit card once, to buy something from CEX.
Coincidence?

*2nd edit*

Ignore that the CEX transaction took place 1 1/2 hours after the Zimusoft one.

The Address Verification System (AVS) is a system used to verify the identity of the person claiming to own the credit card. The system will check the billing address of the credit card provided by the user with the address on file at the credit card company.

So that is just checking the address?

Have you tried a paypal dispute as well as the chargeback?
A paypal dispute might be a good idea as the company will obviously have no proof of delivery if you never received it so you will have a good chance of winning the dispute.
You should have instantly changed your paypal password when you noticed the discrepancy as if they paid via paypal they must a have had access to your account, so if you haven't done that already you should do it now.

It's not on my paypal account.
It's from my credit card straight to their paypal.

You need to do nothing more than tell your bank that you have not authorised this Chargeback, unless tha company has some kind of concrete proof the chargeback will stand.
