howdy all, i've got some peppers (3) that are just out of date so i'd like to use them up in something.
I've got loads of onioins, a few tomatoes, chicken, bacon sausages, a few sauces, but i'm not very creative...anyone got any recipes that would use up say 3 peppers, onions, tomatoes and meat?

how about something like stuffed peppers, thats a good way of using peppers up, not sure what you'd put in it though, perhaps chicken & bacon

How about a chicken casserole. You will need a pot with a lid. Pre heat the oven to 180
chop everything up and leave the chicken in chunks. pre fry the bacon into little crispy cubes. Mix up some stock cube and dried herbs and a bit of salt and pepper. Put it in the oven for about an hour and half on low.

How about grilled chicken on roasted peppers and onions with tomatoes.

Cut up peppers into bite size bits with onions and tomatoes.

Place all together in a baking tray with a little oil and toss about.

Roast in the oven for 20-30 minutes on a medium heat. Turn occasionally.

Grill chicken.

Served peppers on a plate.

Put chicken on top of pepper mix.

Freeze saussages and use when needed.

Freeze bacon and use when needed, though life of bacon is usually long chilled.

Did that last night with my veg. mmmm. delicious. Sliced some carrot and potato with it too and cooked for a little longer:thumbsup:

I would suggest http://www.bbc.co.uk/food/recipes/ if you have particular items you want to use and no ideas. It lets you put in what you have, offers filters like vegetarian or low fat and then gives you some recipes.
