Disabling apps content on ipod touch 4th gen

Could someone possibly give me a step by step instruction as to how to disable apps which I've heard take money from your itunes without necessarily asking first through updates etc. Been told you can turn it off but no idea how!! x

double press the home button quickly and it brings up all the apps that are 'multi tasking', hold an app, and a minus sign appears, hold the minus sign on each of the apps you want to shut down (to stop using data)

All in app purchases will ask for confirmation of iTunes password and also show you the price. They will not just take money.

Helpful tip, I always wondered if they kept running when I don't close them down properly..

Sometimes when I add an app though it mentions turning off preferences to avoid paying or something (i really should pay more attention!). I thought it would be a bit bad if they just take the money but havent changed any preferences.
