Kfc Fried Chicken
3 lb fryer parts
2 pk good seasons italian salad
1 dressing mix
3 T flour
2 t salt
1/4 c lemon juice
2 T butter
8 oz corn oil
2/3 c shortening
1 c milk
1 1/2 c boxed pancake mix
1 t paprika
1/2 t powdered sage
1/4 t pepper
Wipe chicken pieces dry. Make a paste of salad dressing mix, flour,
salt, lemon juice and butter. Brush on to coat chicken evenly with
paste. (Cover both sides of chicken) Refrigerate chicken pieces
several hours or overnight. 1 1/2 hours before serving, heat oil and
shortening till melted in a heavy saucepan. Pour part of this into
two heavy skillets so each is covered about 1" deep. (After each
batch of chicken replace oil in each skillet.) Combine pancake mix
with paprika, sage and pepper. Dip each paste covered chicken piece
first in milk and then in pancake mixture. Dust off excess and place
skin side down in the very hot oil mixture, browning on each side
until golden blonde. Place browned pieces in shallow baking pans in
single layer, skin side up. Spoon remaining milk over pieces. Seal
with foil on 3 sides of pan, leaving one side unsealed. Bake about 40
minutes at 375 degrees. Remove foil entirely and bake another 8 to 10
minutes or till coating is crispy. Baste with milk and drippings
every few minutes. Serves 6-8.

The secret to making kfc chicken isn't the spices, its the way they cook it. You need to pressure fry it, this is why you can almost eat the bones from a kfc chicken.
I do have all the top secret recipe books at home ill have a look through them later for you.

Thanks, numpty. That sounds spot on! :D

I have the book and just made this using chicken thighs / drumsticks. It tastes nothing like KFC at all and is really garlicky. The recipe suggests 18 minutes of deep frying which is laughable. The coating was blackening after 4 minutes!

How was it?
#25
took u almost 2 weeks to make it????
#26
seeing as I kindly gave the recipe, I will pm you my address for you to send me a piece :p lol

I remember I managed to get the actually coating from KFC (know someone) and it just did not taste the same, I think the biggest secret is that industrial pressure? fryer.

1 tablespoon powdered sage leaves
1 teaspoon powdered dry ginger
1 tablespoon crushed rosemary leaves
1 pack of tomato soup mix
1 tablespoon crushed Mexican Origanum leaves
1 teaspoon sweet marjoram
1 teaspoon pepper
1 tablespoon hot pepper powder
1 chicken cut into frying pieces
1 1/2 teaspoon crushed wild thyme leaves
150 grams all purpose flour blended nicely with secret herbs combination
2 tablespoon of garlic salt
2 tablespoon of powdered chicken soup cubes
2 tablespoon of onion salt
2 eggs
160 milliliters of milk
40 gram brown sugar
3 tablespoon of dry minced parsley leaves

You have to put all the ingredients mentioned above in a blender and blend it for 3 to 4 minutes barring flour, eggs and milk.
Next, combine the eggs and milk and beat it to a smooth consistency after that add the previously blended herbs and work out a homogeneous mixture. and take the flour on a baking paper sheet.

Now, dip the chicken pieces in the mixture and roll them on the flour until they are perfectly coated. Fry the pieces in a pressure cooker if you have one or you can just fry them at 365 degrees F (185° C) ascertained by dropping a 2 inch square of bread, it should turn golden brown in about 60 seconds. in the hot oil fry the chicken pieces for 20 to 30 minutes, occasionally turning them so that they are cooked evenly after the chicken pieces are fried golden brown.

Drain the fried chicken for a while on the tissue paper so that it won't be so oily and greasy. Serve them hot.

Ok this is simple, cover the chicken in egg and milk mix and rub on a mixture of sage and onion stuffing with black pepper paprika and cummin powerder , have you ever noticed that parts of the mix are some times not cooked from kfc and this looks and tastes like stuffing, ill let you work the rest out. Yes Mr Saunders deep fried some left over chicken with stuffing on it or in it and said mom this tastes nice what the well are lol
