Gunbet is brill...very lazy days and lively nights!
I went in June and weather was brilliant!
I would recommend doing a boat trip, however, don't book with your tour operator...instead go down to the beach and there guys selling trips down there (we went with Sinbad on the beach outside the Magnific Hotel) MUCH cheaper and full day out! For shopping, I'd strongly recommend the Market in Bodrum (bodrum in general is better for shopping imo), you can get there by Dolmus (local bus service run on little mini-buses!) very cheap. There is also an outdoor nightclub in Bodrum if thats your sort of thing?
Where abouts are you staying in Gumbet?
As for Istanbul, you should be able to get flights from Bodrum around £100 each http://www.thy.com/en-INT/

we had our honeymoon there, was great, boat trip is a must as said in last post, we bought off Sinbad too.
the best bit is book the overnight trip to Ephesus

and Pamukkale

again dont book with tour operator book from the local travel places in Bodrum/Gumbet and save £££

also for eating out Poncho's (In bodrum oposite Halikarnas- http://www.halikarnas.com.tr/) do great Argentinian steaks.
