I have done it wrong! :( and upgraded to 4.0 - which is sh*te and not worth doing if you have a 2G so now I want to downgrade it to any of the other firmwares

Any help would be appreciated please :)

If you have a 2G, use redsn0w to to jailbreak it. Its so quick and easy. Its the easiest way to jailbreak an iPod Touch 2G on iOS 4.0.

So you are saying an iPod 2G iOS4 can be jailbroke easily ?

Google the firmware you want, amking sue you add '.ipsw' to the end if the file before you save it.

Save it to your desktop.

Launch itunes with the touch attached, then hold shift and hit restore. A search option comes up looking for apple files. Browse it to the file saved on your desktop and open. itunes will do the rest and load the firmware.
I used blackrain following the instructions on iclarified

One last question: Since I pressed backup on my itunes with her iPod plugged in, when she comes back tomorrow and I plug it in to itunes, how do I get all her stuff (meaning apps, music and photos) back on ? and not my stuff ?

No probs.

If you backed up on OS4 it won't reload everything as it is a newer firmware than is on your touch. You just need to choose the new touch option and assuming all the apps and stuff were in itunes, they will reload.

I then used blackrain from iclarified and it only took a couple of minutes

By default in Documents and Settings\username\application data\apple computer\mobilesync\backup.

To those who hate itunes: don't know why you don't use sharepod, it's free and it works well.
