I opened up cmd.exe and typed ipconfig /all to check what comes up on my system and found below.

Now I don't want anything to do with Juniper Network as I think this could potentially allow unnecessary remote viewing. How could I delete it without affecting my internet connection?

Have you checked add/remove programs? As it's a virtual network adapter I'd expect the software that created it to be removable from add/remove programs.
