on the sync menu under music is "all music" ticked, my first thought would be to make sure you're not just transfering from specific playlists.

Yep... tick next to Sync Music and all songs and playlists

Are the other five albums compilations and they're showing up under Various Artists.

It sounds like the albums are imported but the tag information is missing so the tracks can't be listed properly. I would delete all the problem tracks if you can find them and before you import them again, use MP3tag on them. You'll get it from:-

http://www.mp3tag.de/en/

It will fill in all the tags automatically, including artwork. It's a bit quircky but you'll get used to how it works after a short amount of time. It is an essntial app when I'm importing into Itunes.

You know I think your right  when I scroll down songs on the Touch the missing ones appear ! however turning the Touch on its side to reveal the moving Album boxes that's when I loose them. Will mp3tag cure this.

You can either delete the tracks via Itunes, run mp3tag and re-import into Itunes or you can manually add the tag info by highlighting the tracks from Itunes and going to Get Info. From there, you can add artist and album details, add the artwork, set is as part of a compilation, gapless album, etc. Either way, it should sort the problem but I would deffo advise you to use mp3tag for all future albums before you import them into Itunes.
