If I install a game onto the hard drive, will it overwrite existing progress saves on my and my kids profiles, meaning we have to start the game again from the beginning?

Loading the game onto the HD has nothing to do with game saves.

Sorry I don't understand that....I won't to play a game from the hard drive that is installed on the hard drive so it does matter.

All games that are installed on the hard drive via a CD require the CD to be played. There is a disk check to ensure the game disk is present or else one copy of a game could be used on multiple xboxs.

I get all that Civic....what I want to know is will it play from the hard drive automatically when I put the game disk in the disk drive or do I need to open a screen in settings / hard drive fills to launch the game.

Yes........it automatically recognises that it's installed and when you start the game will access from the HDD rather than constantly the disk.
