Mexican Rice

Does anyone know any good recipies for mexican rice? Like they have in Chiquitos.

I have looked on a few sites and there arnt that many nice looking ones.

Anyone got a tested recipe they like?

chiquitos are rubbish imo, they just re heat the rice :(

Yeah - Tilda microwave 'pinto bean & chilli' variety. £1.49 a packet, it's great. :-D It used to be sold as Rizazz 'Mexican Spice' before they rebranded and decided to try and look posh. ;-)

it's quite easy to make your own savoury rice.

I start by lightly frying some finely chopped onion and a bit of garlic,add rice so that it gets a light coating of the oil,then add some hot water,not too much at this stage,just enough to cover the rice.add seasonings of choice(vegetable boullion,stock cube etc,chilli powder if you want it spicy,turmeric for colour if you like) salt/pepper.
When the rice has absorbed the water add a bit more,just keep adding a bit more water until the rice is cooked,should take about 10 mins for the rice to cook.

Add vegetables if you want........I put a few frozen peas/sweetcorn in about 5 mins before the end of cooking,so they will be just done in time that the rice is cooked.

You could add whatever you like,chopped peppers,chillies,kidney/pinto beans etc.

Have a play around,experiment a bit an i'm sure you will make a much nicer rice than what you can get in a packet.:)

I do this as well... ASDA sell a 'rubs' for about £2 which is basically a tin of spices themed around a country, mexican, indian, morrocan, etc... makes it even easier!
