Pizza time!

Just thought I'd share this monster I made last night.. First time I've ever made a pizza all by myself. Took about an hour for me just to make the base lol.. Stood there for about 20 minutes unable to get the sticky dough off my hands.

Base - flour, yeast, salt, sugar, oil, water.
Sauce - chilis, tomatoes, tomato paste, sundried tomatoes, anchovies.
Topping - red pepper, olives, mushrooms, more chilis, mozzarella, cheddar, feta, gorgonzola.

Basically everything I like on a pizza but, doh! Forgot to put on the pepperoni.

What's your favourite pizza topping?

if you're trying to get sticky dough off your hands, add a little more flour to the dough. it shouldn't be sticky, but nice and smooth.

well done mate. i normally put a bit of honey in the base, read it in a recipe ages ago, seems to compliment the tomato base very nicely.

Ahh wicked, I'll definitley try that. Only thing I didn't particularly like was the base - came out a bit bland. Need to know papa john's secret.

oops! (i think i rely to heavily on the in-line spell check in ff, if there isn't any squiggly red lines i don't re read it) never noticed the roundness but now alfonse mentioned it i cant quite stop admiring it, my pizza never turns out round

the sauce is really simple and i think tastes just right. cook down some finely chopped onions and garlic until soft, then add a tin of tomatoes, oregano, salt and pepper (you could put some chilli in as well either very finely chopped or dried chilli flakes which is what i tend to use). cook it down until its nice and thick. can always add balsamic vinegar as well, this adds a nice depth

i'm on the look out for a nice bbq base recipe, cause chicken and sweetcorn bbq i another favourite!

That sauce sounds wicked. Gonna try that next time too. Mine still had the bitter sweet taste of the tomato paste a little too much and i really should have de seeded the chili's lol!!

As for the roundness - I just got it as round as I could with a rolling pin, the set it in the pizza tray and used my fingers to bring it to the edges.

I had a spare base in the fridge but didn't have any clingfilm.. Used tin foil instead and it's blown up like a balloon!

make sure you cook the puree for a long time, this takes the bitterness away, i think i add about a tablespoon,

A little bit of sugar in the puree, my old Italian neighbour always swore by it !

No secrets....I just use a proper pizza pan so the edges are turned up. If you know what i mean.
