Potato and cauliflower curry easy recipe wanted anyone???

I tried out a recipe in I think in a Morrisons or Fresh magazine. ( cannot remember which one) Nice and simple, potato, cauliflower, tomatoes, curry powder. It did not have coconut milk in it, Idid not keep the recipe which was stupid of me so I cannot remember what else was in it. Does anyone know a nice simple recipe? I have looked on the Morrisons and Fresh website but it is not on there. Any help would be fab.

I reckon you've got the recipe right there. Could add some sultanas I suppose and maybe some onion?

Try this

8oz couliflower
2 large pots (sized as you like) pre cooked
4 tablespoons of veg ghee (veg oil at a push)
4oz sliced onions
2 cloves of garlic (sliced)
1 inch piece of ginger finely sliced
3 fresh toms (halved)
half a green and half a yellow bell pepper
1 chopped fresh green chilli
1 table spoon crushed cashew nuts
1 tablespoon crushed pistachio nuts
1 teaspoon sultanas(leave out if you dont like them)
1 tablespoon of coconut milk powder
1 tablespoon fresh coriander

make a masala out of the following (use a coffee grinder)

1 tea spoon of cummin seeds
half a teaspoon of turmeric
half a tea spoon of chilli powder
half a teaspoon of garam masala (buy from supermarket)

1. heat the ghee in a wok and stir fry the onions garlic and ginger for 3 mins
2. add the masala with 1 -2 tablespoons of water and continue stir frying for 2 mins
3. add the toms , peppers , and chilli and stir fry for 5 mins
4. add the couliflower and enough water to keep things flowing and mobile in the wok and simmer for 5 mins or unti the cauliflower is tender
5. add the pots (size up to you) nuts , sultanas ,
coconut powder , coriander and salt to taste mix well heat through and hey presto and much better curry that one using curry powder

bob all indian restaraunts use curry powder , so i really have to agree hat you are an Amateur asian cook as you said your self

Ghee gives a richer, heavier sauce than oil. It's also expensive, so it is generally used sparingly as a flavouring in a sauce or to brush fresh-cooked naans, while oil is used for most everyday frying. Ghee and oil give different frying temperatures and start to break down at different heats, but I'm hazy on the details.
Some people find ghee too rich and prefer oil - it's a matter of taste , so its no sin

Try this

make a masala out of the following (use a coffee grinder)

or you could make a PROPER masalla sauce

1/2 tablespoon of Patak's Kashmiri paste
1/4 tablespoon of Patak's Tikka Paste
1/4 tablespoon of Patak's Tandoori paste
1/4 tablespoon of Coleman's Garden Mint
1/8 tablespoon of tandoori masala powder
1/8 tablespoon of garam masala powder
1/4 tablespoon of mix powder (see below)
1/2 tablespoon of garlic/ginger mix
1/4 teaspoon of salt
40 ml of vegetable oil
1/2 kg of natural yoghurt
1/2 teaspoon of red colour powder


Mix all of the above together to make the base red sauce. restaraunt style


Mix Powder

8 teaspoons of turmeric powder
6 teaspoons of Supreme curry powder (must just say curry powder, not Madras powder of anything else).
5 teaspoons of coriander powder
4 teaspoons of cumin powder
2 teaspoons of garlic powder
2 teaspoons of Supreme garam masala
1 teaspoon of ginger powder

Mix all together and store in an airtight contained.
