VALENTINES DINNER QUESTION :-)

As a born romantic, I'm making the missus a 3 course meal for saturday night. I know what I'm doing for starter and dessert but not sure what main to have that compliments what I'm doing:

Starter: Asparagus wrapped in Parma Ham with a parmazan sauce/sprinkles
Dessert: Fresh fruit dipped in chocolate (and then put into fridge)

So two things I need help on please!!!!

1) Can I melt any chocolate or do I need specific stuff?
2) What's a good main to cook to go with what I'm doing? Dont want to do pasta or steak.

As you've got meat in your starter, how about a fishy main? Salmon is pretty easy OR if budget is not an issue, Monkfish is gorgeous. I'd drop my dacks in a second if somebody served it to me! ;-)

Ha, yeah fish might be good. I haven't cooked it before but maybe red mullet on a bed on herby mash?

You can melt almost any choccie... Best way is to break it up & put it into a heatproof bowl and sit the bowl over a saucepan of boiling water on the hob :)

Go to the supermarket, and get a decent choccie for such as Lindt or similar.
Personal taste, but I love venison for my main.

A shared meal is quite romantic; try a small paella with chicken, fish and seafood all mixed in. Keep it warm on the table over a plate warmer and take as long as you like eating. Drawing out the meal as long as possible makes the 'afters' so much better! ;-) If you want to do fish, drizzle some sweet chilli sauce over a nice piece of salmon and sprinkle with sesame seeds and wrap in foil and bake in oven. Fish with too many bones can be very unromantic! Also beware the pee smell after asparagus, its horrid!

Right ok, all IMO to begin with....

Do the asparagus with a hollandaise sauce instead

main:- I have 2 options for you

1:- Fajitas not Old el Paso, you can do it from scratch, anywho the finger food idea is a good lead in for Dessert.

2:- Monk fish tails wrapped in Parma ham on a bed of creamed diced/sliced savoy cabbage, celeriac and carrots

and to go with the chocolate covered fruit a deep rich raspberry coulis will be a nice touch.

Wines, Cava with starter, Prosecco with main try to get a premier Cuvee or Brut Cuvee if budget allows

Thanks for everyones ideas. As another romantic gesture, I have bought three wines to go with the meal - all picked and bottled in October 2007 to go with the time we got engaged.....awwwwwwwwww

If your going to do fish then I would do it with Crushed potatoes rather than mash just to give a good texture variation.
Make sure you don't overcook the asparagus & make sure you don't forget the chapmers!! If your budget isn't massive then M&S do a Pink Pinot Grigio fizz which is very good for the money if a little sweet if thats what you like.
Have fun & don't forget the mood music!

Buy some strawberries and marshmallows to dip into melted chocolate Yummy. Last year boots did a ceramic fondue set with forks etc and a tea light to keep the choc warm. You just pour in the melted choc, light the candle and away you go.

If you want to go for fish, a nice tasty recipe is pepper crusted fish with a lime and coriander vinaigrette or duck breast served with a sticky soy sauce and sauted new potatoes.

Get 2 duck breasts and cut deep into the skin side, rub ground coriander and cumin.
Mix together soy sauce, brown sugar, garlic and ginger and place the seasoned breast flesh side down into the marinade. Leave for about 2 hours or longer.
Heat a frying pan to a medium heat and fry skin side down on a medium heat for about 10 mins. There will be plenty of fat coming out. Turn the breasts over and cook for a further 5 minutes. Duck can be served quite pink, but cook longer if you want. Just be careful not to burn the skin too much. Put on a plate and slice the breast into thick slices, leave the skin intact to hold it all together.
Drain the excess fat from the pan and add the remaning marinade and heat high to reduce down to a thick sauce.
Serve the duck with the sauce poured over, add potatoes sauted with spring onion and green beans.
