Vegetarian meal suggestions.

I have a friend coming over for dinner tonight who is a veggie. I need something relatively simple to cook, any suggestions?

I can actually cook so I'm not looking for recipes really, just suggestions because all I can think of is pasta and that's pretty boring. My mind isn't working.

What shall I do with it?

Quorn mince - chilli and rice, spaghetti bolognese
quorn pieces - 'chicken' curry and rice, 'chicken' stir-fry
Sausage, potatos and veg (most vegetarians I know prefer the cauldron brand of sausages)

TBH, I would be happy with anything, would just be pleased someone had gone to the effort of making a vegetarian meal for me

Linda Mccartney sausage's are lovely. Like Kelly said I think they will be happy with anything.....go for pasta hun nice n easy..

That is a bad plan *may contain meat.

On a serious note you could always go down the qourn route (not a fan it tastes like plastic but veggies going to have an open mind surely)

Thanks, but I've already been out for ingredients and I don't plan on leaving the house again. I like Quorn anyway!

Maybe I should have just gone with this. I'm actually just making a pasta bake because I'm lazy. Quorn pieces, broccoli, mushrooms, onion, garlic, homemade tomato sauce and a load of mozzarella. And garlic bread. And pasta, of course.

Wait a minute, is mozzarella veggie friendly? Godsake.

No, not vegan. I'll make sure there's a happy green V on the cheese before I make it. Or I'll forget and just not mention it.

Most mozzerella is vegetarian but not all cheese is so check the pack

Sounds good and really nice that you have gone to the effort of making it for your friend.

Why not try and google Mediterranian food recipes (greek, italian), Gino has great recipes in his web site as well! Basically you can cook some meat recipe substituting the meat with veggie version one (or even ommiting it). There are recipes that are so amazing and so much healthier as well.
