Really was, not many films I'd bother doing it with. Maybe some other clever films, but general films I wouldn't bother. I hardly ever bother with extras on DVDs/Blu Rays anyway, thus why I never care about oh its the 2 disc version or something.

Watched Fight Club with commentary on.

Some funny bits and also find out reasons as to why they shot the scene in the way they did. e.g The scene where Pitt and Norton are hitting cars with a baseball bat. They both hate Volskswagen cars in real life so every car they hit is a volswagen.

I have with The Goonies, as it showed the studio with all the cast side by side with the movie

Yeah, only a handful. Its usually done with films i've seen hundreds of times and want a different view on it. You get different things out of them. Some are amusing they joke around and have fun with it, some talk about the film and why they did things. I wouldn't do it for everything film. But for ones i like a lot i do.

In the past I used to watch quite a few films with commentary tracks: Goonies, Fight Club, Ferris Bueller, Hot Fuzz, Evil Dead II, Aliens, Clerks etc.
Due to time contraints I tend not to anymore, but I read about a lot of trivia and facts on IMDB instead.

I remember seeing Pan's Labyrinth and immediately watching it all again with commentary.
The Robert Rodriguez commentary on El Mariachi and Once Upon A Time In Mexico were also excellent.
