I'm going have M&S Rosemary Potatoes with rosemary, parsley and roast garlic, along with some plain Quorn chicken style fillets which I'm going add a chilli and ginger sauce to from M&S. I've also got sugar snap peas and carrots and going have a wholemeal bread roll too.

This is a variation of a frittata.
Dice some pepperoni and place in a frying pan (preferably one with a lid) with a little oil.
Chop tomatoes and add to pan. Stir together.
Grate some of the cheese.
Now crack 4-6 eggs into a bowl depending on how hungry you are and whisk with a fork.
Add pepper to the eggs then pour into frying pan and move them around to coat the whole of the base.
Keep moving the mixture until most of the liquid has cooked.
Now add the grated cheese.
Wait until the cheese starts to melt.
Now carefully slide the egg mixture on to the lid, invert the frying pan and place it over the lid.
Quickly invert the lid so that the uncooked side of the frittata is now on the hot pan.
Continue to cook for about a minute or so to seal the underside.
Dive in!!!
