What to put in a panini??????

I've got panini's for lunch tomorrow, any ideas what to put on them? Or even to go with them. ( gonna give one to the misses (panini) )

Melted Mozarella with some kind of salad in,or perhaps roast a few peppers and courgettes.

id have to start with a really strong blue cheese and probably some ham. Wouldnt need a sauce as the blue cheese would be so flavoursome. damn my mouth is watering right now and i still havent had food!!

Mozarella, sunblush tomatoes and chopped sweet bell peppers (Peppadew). Lovely!

Slice mozzarella, tomato, add some torn fresh basil, drizzel with olive oil, salt pepper. Enjoy XX
