wow what a nice gesture

just had a friend pop by for a cuppa and she has made me a huge bread pudding,cor i love the stuff sooooooo much and havent had one for a few years,off to munch now :)

how do you make bread pudding anyhow?!?

Ahh that's nice ... enjoy..

225g (8oz) Stale Bread
110g (4oz) Currants, Raisins or Sultanas
50g (2oz) Brown Sugar
50g (2oz) Butter
½ tsp Mixed Spice
1 Egg
Milk Pre-heat oven to 170°C: 325°F: Gas 3
Break bread into small pieces; soak in cold water at least 1 hour
Strain and squeeze out as dry as possible.
Place into a basin and mash with a fork.
Add the dried fruit, sugar, mixed peel and mixed spice, mixing well.
Add the egg and enough milk to enable the mixture to drop easily from a spoon.
Place into a greased baking tin.
Bake for about an hour or until slightly firm to the touch.
When done turn out on to a hot dish.

I believe u soak loads of bread in water....then add raisins and sugar

then u put a little bit of fat in the dish and bake...then sprinkle with sugar

Sounds fab, my mom used to make it when I was a kid, but I think she used to put lard in rather than butter and it was always a wee bit slimy and greasy where the lard settled on the bottom, this recipe with butter sounds much better, yummy yummy.....butter :-D, .................lard Blah!! :-D

Can't beat bread and butter pudding but it must be made with sultanas and the top layer of bread has to be crispy ! Sooooo yummy.

Here's another 10/10 recipe (nicked of the net) which sounds pretty awful but is absolutely scrummy !!

Tea Loaf Recipe
Ingredients
350g Mixed Fruit
200g Soft Brown Sugar
270g Self Raising Flour
3/4 Pint Freshly Made Tea
2 Medium Eggs


DIRECTIONS
Make the tea, I use Yorkshire Tea but whatever you use make sure it's decent strength and let it brew before adding.
Pour over the Fruit and Sugar, and leave to soak overnight (or longer if you like tea, I left it soaking for a week once and it was a fine loaf).

After the Fruit and Sugar has soaked in the tea, for however long you like, mix the Flour and beaten Eggs with the Fruit and Sugar and cook in a greased 2lb Loaf Tin in a pre-heated oven at 150ºC (300ºF, Gas Mark 2) for 1.5 hours. Cool on a Wire Rack and serve sliced with butter.

Enjoy !!
