Pokémon Sun and Pokémon Moon will be the first games in the Pokémon series to allow players to choose from nine languages to play in. In addition to English, French, German, Italian, Japanese, Korean, and Spanish, players will now be able to play in both Traditional and Simplified Chinese.

I don't know the exact differences, but just get the Ultra version. It can be had for pennies more and I know it has more content
Dont forget you can get a legendary Pokemon every month for free up until November, by choosing Mystery Gift from the initial menu! This month is Regigigas/Heatran for Sun/Moon respectively
