A bit niche this, but a good price for 150 foot of Quality Butchers Paper, for wrapping Briskets, Pork Shoulders/Butts & Ribs, if you cook lo&slo. I have ordered this brand and Tenderlicious supplied direct from Amazon US, they take less than 2 weeks to arrive and all shipping and Import duties are included. The few places in the UK that sell this sort of quantity are usually around the £40 mark and i think this is better quality than most of the stuff sold over here, so a good saving to be had.

    As with everything there are also some people selling ordinary brown Kraft Paper as Butchers paper as well as cheaper Chinese made versions appearing on the market, not enough feedback to warrant trying for me yet. I would rather stick to the tried & trusted USA paper for now. (edited)

    As said earlier, it can help with the stall, but I tend to wrap just after the stall has finished for the last 15-20F of the cook.

    Main benefit for me I have found is, if you use foil the juice pools in it and causes a steam effect that can pull the bark from the meat when you unwrap it, and if you have done a lo&slo cook for X amount of hours to have the bark go soft and come away, can be a bit frustrating. The paper also absorbs the moisture and grease rather than keeping it pooled in, like foil.but still keeps the meat moist

    As with everything no right or wrong way, just what suits you best.

    The price mainly fluctuates with the dollar/pound rate, pretty good at the moment, so as cheap as it has been for the last 18 months. Also quite hard to find quality paper at this price in the UK. I find a roll like this will last me a full year, and do 20-30 cooks

    I wrap any meat I do following Aaron Franklins method here Works well for me

    However you get a reduced bark.
    So depends on your preference / time constraints.

    If I have the time to go unwrapped a water pan underneath keeps it more than moist enough. (edited)

    Funny you should post this.... I just had delivered a bluetooth thermometer with 6 probes arrive with the intention of doing just this with some brisket. I paid £11.50 for it though a week ago (over £16 now) LINK

    I know it is, same as Tenderlicious. Posted to let any people that use this sort of paper, that it can be had a lot cheaper via Amazon US even with shipping and import duties, that weren't aware of it
