This deal is expired. Here are some options that might interest you:
Eurostar currently have lots of seats for £29 one way (£58 return) for departures between April and early July for journeys to Paris, Brussels and Lille. The big advantage of taking Eurostar compared to the flying is the fact you can take what would be classified as hold baggage on aircraft for free on Eurostar. Images of the available dates for Paris and Brussels are provided below, alongside a link to the date matrices. A date matrix does not appear to exist for Lille, although there are plenty of dates available between April and early July.

How do you generate the date/fare matrix for a particular destination on Eurostar's website? Can't seem to work it out

I think you're getting confused by the website. When you select a return ticket it shows the price for both the way out and then back before giving you a total at the end. It might be that you're reading just half of the ticket price. I have never known a return ticket to cost less than £55 on Eurostar.
Give it another go and select both an outbound and return date and you'll see what I mean.
To answer your question though: missing either part of your ticket is fine. You're given two separate ones to scan in with. (edited)
For what it's worth I take the Eurostar sometimes a couple of times a month and have never known St. Pancras or Eurolille (at least) to reject my bag that's ~110cm tall at times.

You can use your Interrail Global Pass in your own country during two travel days of your choice. For instance, one outbound trip (leaving your own country) and one inbound trip (entering your own country). You can take as many trains in your own country as necessary. IIRC you can pick anywhere that has a train station as your final destination and you effectively pay £10 extra for a “go anywhere in that country” train ticket
If it helps: these are super off-peak prices. A typical ticket is £70 - £200.
Which you could pay to get from Southampton to Manchester on domestic rail...

Interestingly the UK won't sell it because it 'competes' with another package they sell that UK residents can't buy!
EDIT: It says it isn't brexit related but is an obvious comparison, we used to be joined now they all still are but we are on our own. I have no idea how many people used these passes to visit the UK while touring the EU but I suspect most won't bother if extra charges apply whereas all the other countries are included. (edited)

Think So. Might ask in my local station Brighton but normally they say the pass is your ticket and let you through the gates.
Also, have the cheaper fares been applicable to the end of July yet? I have my eye on a one-way trip at the end of July and the cheapest tickets are currently £57 each one-way - not sure whether to purchase or wait and see if any promotions come along?
