Books by Claudia Gray like 'Bloodline' build up some content to the rise of the First Order. Any books by Claudia Gray are great tbh, especially if you want to stick to 'Canon'.
For a totally different era to the movies there's The High Republic series which is great. For that start with 'Light of the Jedi' by Charles Soule. Again, anything by Charles Soule (like his Vader comics) are excellent.
Also, Timothy Zahn's Thrawn books may give some context to the character's intro as the new big bad in Ahsoka and the Mandalorian.
That's probably enough for now tbh.
