Don't expect much to be open on Monday in way of attractions /tourist sites. Do all that in the Sunday.

Visit chocolate museum or any of many Kölsh breweries (can drink and eat there) or Cologne cathedral, take ferry along Rhein, visit Roman museum, Brühl castle etc
Opposite the end of the Cathedral there's a fancy looking hotel. Next door to that is the most amazing traditional German brewhaus/restaurant place called Gaffel am Dom. When I went many years ago there were people drinking in there in traditional dress and singing songs and the Bratwurst were amazing!!! So good!

We did a night (yes, one) in Cologne flew out Saturday morning and flew back Sunday night for £70 flights + Pullman hotel. We did a segway tour that cost us €60 each for 3 hours, highly recommend our tour guide Paula at best way to see the city in a short time. Hohenzollernring seemed to be the main bar/night life region and Balthasar on Aachener Street was a perfect end to the trip.

Actually it’s the other way around. I live in Cologne. In Germany everything is closed on a Sunday, literally everything. Monday is fine.
Gilden Kölsch in the old town is a nice place on a weekend, and they have a club downstairs in the cellar. I’ve lived in Cologne for the last 5 years so if anyone needs some tips just let me know.
