You sound like you've been eating aluminium pans!
(Sorry for the dementia joke -a right mf**ker of a disease)

With metal handles you've got the assess the transmission of heat from the pan to the handle. Some are truly shocking and suggest you use a barrier !

Can't comment on these, just beware and ask first.

just get stainless steel pans, it's no coincidence that professional kitchenss use them.

Professional kitchens also use a shed load of oil when cooking, and I don't know about you, but I value my arteries!

if by proffessional you mean the local takeaway. Non-stick frying pans make sense but anyway you only need to coat the bottom of the pan and really what are you sticking to saucepans that won't get deglazed anyway.
