It should keep for some time as it’s cured.

You can cut chunks off, place in a container and cover will olive oil. You can re-use the oil once you’ve finished with it.

Store ambient, not fridge. Once cut, rub cut portion with olive oil and cover with a tea towel. You can also lay (not wrap) a piece of cling film on cut portion-to stop it drying out. Keeps ages, months. Any that starts to look unsavoury just cut away, the meat below will be fine. Biggest problem is it drying out.

Longer. I've had one the last 2 years and kept them going til easter! No refrigeration required. To keep it fresh brush a little olive oil on the cut surface after finishing with it, then drape a piece of cling film over it with a tea towel on top to weigh it down. They should be 8-12 months cured as is so another few months is fine as long as you don't allow it to dry out.
Fancy getting one of these this year, although I'm sure they always do a cheaper one at Aldi, albeit probably a bit smaller.
What happens if it dries out /??

Traditionally in Spain these are eaten throughout the year u TIL the following xmas. If you follow the advise of the poster above about how to treat It after cutting it will last this ling easily. I have bought these several times and from memory usually say 12-18 months hope this helps merry Xmas to all

At £4 a kilo, including bone you probably get what you pay for. The different qualities of these vary immensely. In Spain (and here) you can pay way more than £25 per kilo. It's best looked on as a bit of fun, but, be careful when cutting it's easy to slip when working round bone- where's the plasters or possibly tourniquet!!
I've given up buying them and try and buy some better quality pre-sliced.
Saying that if I saw a reduced pata negra ham I may be tempted!

I bought one lasy year & was disappointed, I found it very very difficult to carve, I have the correct knife & have no trouble carving any other joints of meat. When I did carve it was much much too thick so I chopped some into squares & used in a pasta. What a waste of money. This year I will but some ready sliced.

Must say I couldn't pay the price on Amazon, but I always look out for a bargain.
Other words to look out for as well as pata negra, are, iberico, belotta and more. If you see paleta that means shoulder as opposed to leg.

Just had a look at one - best before 21/08/19
Would rather enjoy some properly seasoned meat, bring on some chorzio and my frying pan. Then place on top of cheese on a cracker. Keep the oil after cooking to fry your eggs in the morning!

I'm surprised but Aldi is actually more expensive. They are selling 2.3-2.6kg for £25 at the moment. It might be a better meat though.

May well be aged longer.
I don't think the Aldi one has a bone in it - its just meat..
